Co-encapsulation of curcumin and β-carotene in Pickering emulsions stabilized by complex nanoparticles: Effects of microfluidization and thermal treatment

Yang Wei et al.

Summary: The study demonstrated that suitable parameters for stable beta-carotene loaded Pickering emulsions were a particle concentration of 2.0%, an operating pressure of 100 MPa, and a heating temperature of 60 degrees Celsius. Co-encapsulation showed a synergistic effect on improving the photothermal stability of beta-carotene and curcumin, but higher particle concentrations and heating temperatures may decrease bioaccessibility.

Tuning the molecular interactions between gliadin and tannic acid to prepare Pickering stabilizers with improved emulsifying properties

Xiangwei Zhu et al.

Summary: This study developed different gliadin/tannic acid nanoparticles and evaluated their ability to stabilize an oil-in-water emulsion at a low solid concentration. Results showed that emulsions stabilized by covalent GTNP had the greatest stability and smallest mean particle size. Additionally, the covalent GTNP exhibited intermediate wettability at the oil/water interface, contributing to its emulsifying properties.

Flexible protein nanofibrils fabricated in aqueous ethanol: Physical characteristics and properties of forming emulsions of conjugated linolenic acid

Gang Liu et al.

Summary: This study investigated the physical and chemical properties of emulsions prepared with nanofibrils of varying flexibility. Increasing ethanol levels led to more worm-like nanofibrils, especially in glycated proteins, which improved the thermal stability of the emulsions. The presence of worm-like nanofibrils also enhanced the oxidative stability of the emulsions, indicating potential applications in functional foods.

Improved photostability of folic acid by the radical-scavenging effect of tannic acid

Yongquan Wang et al.

Summary: Folic acid degrades into different products under UV irradiation, but the addition of tannic acid (TA) can protect and improve the stability and retention rate of folic acid. Furthermore, TA can enhance the photostability of folic acid by its radical-scavenging effect.

Effects of pH and temperature on the structure, rheological and gel-forming properties of sugar beet pectins

Tao Zhang et al.

Summary: In this study, sugar beet pectin was modified by alkaline treatment at both 25 degrees C and 3 degrees C to produce gel-type pectins with stable elastic gel properties. The low temperature effectively inhibited the beta-elimination of SBP and resulted in higher molecular weight and galacturonic acid content. SBP treated under pH 11 and 12 at 3 degrees C exhibited low degree of methylation and acetylation, forming stable elastic gels that were confirmed to be frequency-independent through rheological analysis.

Zein Colloidal Particles and Cellulose Nanocrystals Synergistic Stabilization of Pickering Emulsions for Delivery of β-Carotene

Yang Wei et al.

Summary: This study used different types of particles to stabilize beta-carotene-loaded Pickering emulsions, resulting in improved physical and photothermal stability. By adjusting the mass ratio and addition sequence of distinct particles at the interface, the bioaccessibility of beta-carotene ranged from 9.14% to 27.25%. The Pickering emulsion with the novel particle-particle complex interface was designed for enhanced stability, delayed lipolysis, or sustained nutrient release in foods and pharmaceuticals.
