Effect of plasticizer and zein subunit on rheology and texture of zein network

Xinrui Zhang et al.

Summary: Zein can form a viscoelastic network similar to gluten, improving the texture of gluten-free foods. Plasticizer and zein subunits influence the network's viscoelasticity, with acetic acid maintaining elasticity better than ethanol. The presence of β- and γ-zein increases yield strain and cohesive force, transitioning zein to a more ordered network.

Alkaline conjugation of caseinate and propylene glycol alginate to prepare biopolymer complexes stabilizing oil-in-water emulsion gels

Cuixia Sun et al.

Summary: This study presents a novel approach for creating covalently bonded complexes of sodium caseinate and propylene glycol alginate without using a cross-linking agent. The complexes exhibit improved thermal stability and gel-like structure, making them potentially significant for enhancing the quality of oil-in-water emulsion products like mayonnaises.

Surface coating of zein nanoparticles to improve the application of bioactive compounds: A review

Yongkai Yuan et al.

Summary: The development of surface-coated zein nanoparticles has greatly enhanced their performance in delivering bioactive compounds, leading to broader applications in the food industry. Methods for surface coating include antisolvent precipitation, antisolvent co-precipitation, layer-by-layer, solvent evaporation, and pH-driven, with materials mainly proteins, polysaccharides, surfactants, and composites. Challenges in surface coating development lie in improving the application of zein carriers in commercial products and advancing laboratory-level researches.

Thermal treatment of dry zein to improve rheological properties in gluten-free dough

Enrico Federici et al.

Summary: Research has shown that thermal treatments above 160 degrees Celsius can improve the viscoelastic properties of zein dough by generating higher molecular weight fractions, with improved elasticity observed in zein hydrated at 160-190 degrees Celsius. However, higher temperature treatments did not show the same improvements. Heat-induced cross-linking and structural rearrangement of zein enhances its function in gluten-free doughs, resulting in improved dough quality and strain-hardening behavior.

Physical properties of zein networks treated with microbial transglutaminase

Kristin D. Mattice et al.

Summary: This study investigated potential improvements to the physical properties of brittle, self-assembled zein networks through microbial transglutaminase crosslinking. Although crosslinked heteropolymers were observed, they were not found in multiprotein networks with zein, resulting in a weaker structure. The observed behavior was mainly attributed to glutamine deamidation by microbial transglutaminase, changing the hydrophobicity of the protein and modifying non-covalent bonding within the network.
