Nutritional Composition and Sensory Acceptability of Stinging Nettle (Urtica simensis) Flour-Supplemented Unleavened Maize (Zea mays L.) Flatbread (Kitta)

Summary: This study investigated the nutritional composition and sensory acceptability of maize flatbread supplemented with stinging nettle flour. The results showed a decrease in protein and fat content with increasing nettle flour supplementation, while ash, fiber, and carbohydrate content slightly increased. Calcium, zinc, and iron content significantly increased with nettle flour addition. However, all sensory tests indicated decreased acceptability as the amount of nettle flour increased, with the control group being the most preferred.

Bioactive Compounds in Wild Nettle (Urtica dioica L.) Leaves and Stalks: Polyphenols and Pigments upon Seasonal and Habitat Variations

Summary: This study evaluated the presence of bioactives in wild nettle leaves and stalks during different phenological stages and in various natural habitats. The results showed that nettle leaves contained significantly higher amounts of analyzed compounds compared to stalks, with polyphenols accumulating the most before flowering and pigments during flowering. Habitat variations greatly influenced the amounts of analyzed bioactives, with continental samples having higher levels of polyphenols and seaside samples being more abundant with pigments. Levels of ORAC followed a similar pattern, being higher in leaves samples collected before and during flowering from continental habitats.
