Enhancement of the aroma in low-alcohol apple-blended pear wine mixed fermented with Saccharomyces cerevisiae and non-Saccharomyces yeasts

Summary: Zaosu pear, a high-yield cultivar widely planted in Northwest China, is facing huge losses as a large number of ripe fruits are spoiled in orchards due to poor market conditions. A novel fermentation strategy using mixed inoculation of M. pulcherrima 346 and S. cerevisiae ES488 has been explored to enhance the aroma compounds in pear wine, resulting in floral and fruity aromas and more complex and rounded flavors. Mixing Zaosu pear juice with apple juice has also been found to increase the total content of aroma compounds in the wine, making it a potential solution to reduce waste and improve quality.

The Correlation Mechanism between Dominant Bacteria and Primary Metabolites during Fermentation of Red Sour Soup

Summary: This study investigated the effects of lactic acid bacteria (LAB) inoculation on microbial communities and metabolite contents in Chinese red sour soup. The fermentation process resulted in a decrease in native bacterial strains and domination of LAB, leading to differences in bacterial abundance and metabolite types or contents. The fermented samples showed significantly higher relative contents of lactic acid, thymine, and ascorbic acid compared to the control. Lacticaseibacillus rhamnosus was positively associated with enriched metabolites, contributing to the flavor and quality of the red sour soup.

Improvement of the storage stability of C-phycocyanin in beverages by high-pressure processing

Summary: This study explores the impact of high-pressure processing (HPP) on the structure and color stability of phycocyanin, as well as its mixtures with whey protein and carrageenan. The results indicate that pH plays a significant role in the stability of the samples during HPP treatment, with pH 3.0 showing the highest stability. Furthermore, HPP treatment enhances the light stability of the samples, with improvements observed in phycocyanin-whey protein mixture at pH 5.0 and phycocyanin-carrageenan at pH 7.0.

Probing the combined impact of pulsed electric field and ultra-sonication on the quality of spinach juice

Summary: The combined treatment of ultrasound and pulsed electric field (US-PEF) showed significant improvement in the nutritional quality and stability of spinach juice, increasing the content of flavonoids, phenolic, flavonols, antioxidant activities, chlorophyll, carotenoids, vitamin C, and anthocyanins while decreasing enzyme activity. The findings suggest that US-PEF treatment can enhance the quality of spinach juice on an industrial scale.
