Fabrication, structural characterization and functional attributes of polysaccharide-surfactant-protein ternary complexes for delivery of curcumin

Summary: In this study, nanocomplexes as a novel delivery system for curcumin were successfully fabricated using high methoxyl pectin, individual surfactants, and pea protein isolate. The complexes showed high encapsulation efficiencies of curcumin and were formed mainly by hydrogen bonding and electrostatic attraction. Additionally, the curcumin within the complexes exhibited better stability under UV-light, thermal, and simulated gastrointestinal conditions.

Fabrication and characterization of starch/zein nanocomposites with pH-responsive emulsion behavior

Formulated protein-polysaccharide-surfactant ternary complexes for co-encapsulation of curcumin and resveratrol: Characterization, stability and in vitro digestibility

Summary: A complex of pea protein isolate-high methoxyl pectin-rhamnolipid was developed to coencapsulate curcumin and resveratrol, exhibiting excellent particle size and encapsulation efficiency. The formation of complexes was driven by hydrogen bonding, hydrophobic interaction, and electrostatic attraction. The X-ray Diffraction results confirmed the amorphous state of curcumin and resveratrol in the complexes.
