Interaction of dough preparation method, green tea extract and baking temperature on the quality of rye bread and acrylamide content

Sylwia Onacik-Gur et al.

Summary: The study aimed to determine the impact of dough preparation method, green tea extract addition, and baking temperature on rye bread quality and acrylamide content. Factors such as dough pH, GTE addition, and baking method all influenced the quality of the bread, with indirect dough preparation resulting in darker crust color and lower acrylamide formation. Lower baking temperature also led to a decrease in acrylamide content in the final bread products.

Heat-induced changes in the sensory properties of milk

Tim Coolbear et al.

Summary: Heat treatment of milk is necessary to extend its shelf life by reducing microorganisms and enzymes, but it also affects its sensory qualities. Different combinations of time and temperature are used in the dairy industry to balance shelf-life extension and minimizing adverse changes in sensory characteristics for consumer acceptance.

Shelf-life prediction and chemical characteristics analysis of milk formula during storage

Yujun Jiang et al.

Summary: This study investigated changes in the chemical characteristics of milk formula stored at 25°C, 30°C, and 40°C for 6 months. Findings revealed that three vitamins degraded to varying degrees at all temperatures over time, lipid oxidation continued during storage, and the formation of volatile components was influenced by storage temperature and time. Additionally, fatty acids composition remained stable at all storage temperatures except for polyunsaturated fatty acids (PUFAs), which showed correlation with volatile components only at 30°C and 40°C.
