Blockchain-based traceability and demand for US beef in China

Wen Lin et al.

Summary: Amid stringent regulations and a ban, the U.S. beef industry is regaining its market presence in China with the help of blockchain technology. A significant 37% of the market is willing to pay a premium for U.S. beef that is traceable using blockchains, indicating that investments in blockchain-based traceability systems could help producers capture a sizable market share in China.

The Basket-Based Choice Experiment: A Method for Food Demand Policy Analysis

Vincenzina Caputo et al.

Summary: This study introduces a basket-based choice experiment approach that allows consumers to select multiple food items, with results showing that consumers commonly select three to four items for their basket. Unlike traditional choice experiments, this approach is able to capture a rich set of substitution and complementary patterns.

Methodological Advances in Food Choice Experiments and Modeling: Current Practices, Challenges, and Future Research Directions

Vincenzina Caputo et al.

Summary: In recent decades, there has been rapid growth in the application of discrete choice experiments in food choice research. Empirical studies have focused on consumer preferences, demand for various food attributes, labeling programs, novel products, and new food technologies. Methodological contributions have included new theories, elicitation methods, and modeling advancements. This study reviews recent methodological contributions in the field, highlights existing knowledge gaps, and discusses potential future research directions.

Logit Mixed Logit Under Asymmetry and Multimodality of WTP: A Monte Carlo EvaluationJEL codes

Riccardo Scarpa et al.

Summary: The logit-mixed logit (LML) model advances choice modeling by generalizing previous parametric and semi-nonparametric specifications, outperforming conventional mixed logit models (MXL) in terms of bias, and achieving lower mean squared error (MSE) only at larger sample sizes with some nuances.

Choosing quantities impacts individuals choice, rationality, and willingness to pay estimates

Elliott J. Dennis et al.

Summary: The study found that flexibility in consumer quantity choice provides similar choice rationality and consumer segmentation as the conventional restricted quantity framework, while also improving choice frequencies and willingness-to-pay estimates. Additional benefits include understanding consumer preferences for variety and habit formation, and generating data compatible with traditional demand estimation.
