Scientific concepts and methods for moving persistence assessments into the 21st century

A New Look at Models of the Combined Effect of Temperature, pH, Water Activity, or Other Factors on Microbial Growth Rate

Summary: The gamma hypothesis is a popular mathematical modeling approach for considering the combined effect of various factors on microbial growth rate, such as temperature, pH, water activity, oxygen tension, and concentrations of salts, sugars, alcohol, and antimicrobials. It suggests that the growth rate can be expressed as a multiplication product of algebraic terms constructed from the cardinal parameters of each individual factor. Simulated examples demonstrate how different cardinal parameter combinations affect growth kinetics.
