Improving the stability and bioavailability of tea polyphenols by encapsulations: a review

Summary: Tea polyphenols have attracted research interest due to their health benefits, but their oral bioavailability is low. Delivery systems made of food-grade materials can improve the stability and bioavailability of tea polyphenols. This review discusses the chemistry of tea polyphenols, the setbacks of their application, and strategies for designing delivery systems. Different formulations, such as emulsion-based systems and nano/microparticles-based systems, are evaluated for encapsulating tea polyphenols. The findings provide insights for the delivery of tea polyphenols and their application in fortified food products.

Starch/tea polyphenols nanofibrous films for food packaging application: From facile construction to enhance mechanical, antioxidant and hydrophobic properties

Summary: This study developed a fast, simple, and environmentally friendly method to construct polyfunctional starch/tea polyphenols nanofibrous films (STNFs) using temperature-assisted electrospinning. The addition of tea polyphenols (TP) was found to enhance the antioxidant activity of STNFs without affecting the mechanical properties, while also improving the hydrophobicity of the films. These results represent a significant advancement in promoting the sustainable application of functional starch-based materials in food packaging.

Pickering emulsifiers based on enzymatically modified quinoa starches: Preparation, microstructures, hydrophilic property and emulsifying property

Summary: Quinoa starch was developed as a new Pickering emulsifier through enzymatic modification, with studies conducted on its structural characteristics, hydrophilic properties, and emulsifying properties. It was found that the smallest particle size and closest angle to 90 degrees resulted in the best emulsifying performance of EM-9. Additionally, EM quinoa starch showed higher emulsifying capacity at a higher oil volume fraction, indicating potential use in products with higher oil content.

Novel active starch films incorporating tea polyphenols-loaded porous starch as food packaging materials

Summary: A novel active food packaging film was developed using corn starch and tea polyphenol-loaded porous starch, which demonstrated strong TP adsorption capacity and sustained slow release properties. The films showed homogeneous distribution of components, good mechanical properties, UV barrier properties, thermal stability, and excellent antioxidant properties. The slow release of TP from the films was sustained, extending the protection to the food product.

Effects of the degree of substitution of OSA on the properties of starch microparticle-stabilized emulsions

Summary: An amphiphilic polymer of octenyl succinic anhydride (OSA)-modified starch microparticles (SMPs) was synthesized and used to stabilize emulsions. The study investigated the effects of degree of substitution (DS) on the physicochemical properties of OSA-modified SMPs and the stability of emulsions. Results showed that increasing DS improved the hydrophobicity of SMPs, enhanced emulsion stability and encapsulation efficiency of curcumin.
