Price of change: Does a small alteration to the price of meat and vegetarian options affect their sales?

Emma E. Garnett et al.

Summary: Reducing meat and fish consumption in wealthier countries can help mitigate climate change, with price changes potentially being a lever for increasing vegetarian meal consumption. The study found that altering prices increased the proportion of vegetarian sales, but did not significantly impact meat sales. Students mainly paying with university cards may have lessened the impact of the price intervention. Further field studies are needed to test different price changes in non-university populations.
