Comparative analysis of aroma compounds in Chinese traditional dry-rendered fat by HS/GC-IMS, SPME/GC-MS, and SPME/GC-O

Summary: In this study, aroma compositions of Chinese traditional dry-rendered subcutaneous chicken, pork, beef, and sheep fats were analyzed using different analytical approaches. The results showed that the SPME/GC-O approach performed the best in differentiating the aromas of the four fats. Additionally, PCA analysis and PLS-DA model analysis provided valuable information for identifying marker compounds that differentiate the aromas of the different fats.
