Impacts of high-pressure processing on quality and shelf-life of yellowfin tuna (Thunnus albacares) stored at 4°C and 15°C

Summary: The objective of this study was to investigate the effects of high-pressure processing (HPP) on the quality and shelf-life of yellowfin tuna stored at low temperature. The results showed that HPP significantly reduced the microbial count in tuna flesh, increased its lightness, yellowness, and texture, and decreased its redness. Furthermore, HPP at pressures higher than 300 MPa delayed microbial growth and reduced the levels of total volatile basic nitrogen (TVBN) and histamine in the tuna samples during storage. Therefore, HPP at least 300 MPa for 5 min can effectively extend the shelf-life of yellowfin tuna at low temperature.
