Tuning the molecular interactions between gliadin and tannic acid to prepare Pickering stabilizers with improved emulsifying properties

Summary: This study developed different gliadin/tannic acid nanoparticles and evaluated their ability to stabilize an oil-in-water emulsion at a low solid concentration. Results showed that emulsions stabilized by covalent GTNP had the greatest stability and smallest mean particle size. Additionally, the covalent GTNP exhibited intermediate wettability at the oil/water interface, contributing to its emulsifying properties.
