Conventional histamine detection is slow and leads to bottlenecks in the supply chain, highlighting the importance of developing a rapid on-site detection system for seafood suppliers. The impedance-based histamine detection sensor described in the study can detect histamine levels in the range of 100-500 ppm and shows promise for detecting other food contaminants in aqueous solutions.
