Summary: This study investigated the survival capacity and probiotic properties of Lactiplantibacillus plantarum LRCC5314 isolated from kimchi. LRCC5314 exhibited stable survival under acidic and bile salt conditions, and showed strong adhesion to gut epithelial cells. It also demonstrated anti-inflammatory activities, inhibition of adipogenesis, enzyme activity-inhibition, and reduction in stress hormone levels.

Summary: By isolating the EPS non-producing variant C4 through cultivating Lactococcus lactis subsp. cremoris strain FC at 37 degrees Celsius, it was confirmed that EPS biosynthesis is related to genes epsX, epsL, epsB, epsD, and orfY. Fermented yogurt with strain FC was found to be stickier and produced less whey compared to yogurt fermented with strain C4. Maintaining strain FC at its optimal growth temperature is crucial for the production of viscous yogurt, as loss of the eps-encoding plasmid leads to the abolishment of EPS biosynthesis.
