Influence of Freezing Parameters on the Formation of Internal Porous Structure and Its Impact on Freeze-Drying Kinetics

Summary: This study investigated the influence of freezing process parameters on the formation of internal structure of frozen coffee granules and how it affects drying kinetics. Factors such as cooling temperature, scraper rotation speed, and temperature cycles were found to significantly impact ice crystal structure. The study also showed that factors like degree of supercooling, number of temperature cycles, and freezing rates can affect crystal size and drying kinetics.

In situ micro-computed tomography to study microstructure and sublimation front during freeze-drying

Summary: A new method for examining the freeze-drying process of frozen solutions in situ was presented in this study, utilizing high resolution micro-computed X-Ray tomography. Maltodextrin and sucrose solutions were used as model substances for proof of concept. The results qualitatively compared drying kinetics using X-Ray radiography and pore structure using X-Ray tomography, providing a basis for future studies.
