Impact of microwave roasting on physicochemical properties, maillard reaction products, antioxidant activity and oxidative stability of nigella seed (Nigella sativa L.) oil

Summary: The study showed that high power microwave roasting (720 W) for 10 minutes resulted in black seed oil with higher total phenolic content, radical scavenging activity, and oxidative stability index, while the highest oil yield and low acid value were observed for black seed oil roasted at 540 W for 10 minutes. Microwave roasting had a slight influence on the fatty acid composition.

Comparative analysis of the nutritional profiles of selected Solanum species grown in Sri Lanka

Summary: Among the studied Solanum species, the nutritional significance of S. torvum was supported by the highest quantities of protein, total carbohydrate, almost all minerals, vitamins C, D and E, while the nutritional importance of S. melongena var. insanum was highlighted by the highest quantities of PUFA and MUFA. Additionally, S. melongena (Wambatu) had the highest contents of dietary fiber and vitamins K, A, B1 and B2, indicating the higher nutritional value compared to S. torvum (Thibbatu) and S. melongena var. insanum. Furthermore, the highest commercially cultivated S. melongena (Wambatu) contained significantly higher amounts of Cd and As than the other two Solanum species tested.
