Characterization and properties of purple yam (Dioscorea trifida) powder obtained by refractance window drying

Samiria de Jesus Lopes Santos et al.

Summary: In this study, purple yam paste was dried using refractance window drying technique, resulting in powders with microbiological stability, good fluidity, and low cohesiveness. The retention rates of bioactive compounds were highest at drying temperatures of 70 and 80 degrees Celsius.

Effects of drying methods on the characterization of fatty acids, bioactive compounds and antioxidant capacity in a thin layer of physalis (Physalis peruvianaL.) pulp

Luis Puente et al.

Summary: The study found that drying methods at high temperatures have positive effects on the physico-chemical properties, color, antioxidant capacity, tocopherol, and fatty acids content of physalis pulp. Different drying methods also significantly impact the chromatic parameters and hue angle of the pulp.

Refractance window drying: A cohort review on quality characteristics

Roji Waghmare

Summary: RWTM drying has the potential to minimize changes in the quality properties of food by using circulating hot water to bring thermal energy to the material to be dried. It restricts the temperature of the drying material surface to 70-85°C, allowing for high retention of material quality and heat sensitive nutritional compounds in the final dried product. Compared to other drying processes, RWTM drying offers advantages in terms of retaining heat labile compounds, quality parameters, and energy efficiency with reduced operating costs.

Drying kinetics, heat quantities, and physiochemical characteristics of strawberry puree by Refractance Window drying system

Shivmurti Shrivastav et al.

Summary: The study on the drying kinetics of strawberry puree using Refractance Window (RW) drying system showed that the system is advantageous in terms of reducing phenolic content and ascorbic acid levels. However, it was found that the rehydrated RW dried puree had a darker color compared to fresh puree.
