Antifungal Action of Ozone on Chicken Eggshell Cuticles: A Preliminary Study

Summary: Ozone gas (O-3) is used as an oxidizing agent to control microorganisms and degrade toxic compounds in food industries. Studies have shown its potential in reducing pathogenic bacteria, but its effects on eggshell cuticle and fungal structures are still not well understood. In this research, scanning electron microscopy (SEM) was used to assess the antifungal action of O-3 on eggshells, showing damage to fungi hyphae without severe compromise to the external eggshell structure. Further studies are needed to determine the ideal O-3 treatment for fungal decontamination of chicken eggs.

Summary: The study compared the uterine transcriptome and proteome of laying hens producing eggs with good and poor cuticle quality, identifying genes related to eggshell cuticle quality. Differences in gene expression were found between hens with good and poor cuticle quality. PTGDS, PLCG2, ADM and PRLR genes may play crucial roles in regulating cuticle deposition. The findings provide new insights into the genetic regulation of cuticle deposition in laying hens.
