Comparative study of nutritional properties and antioxidant activity of raw and fermented (black) garlic

Effects of thermal treatment on alliin and its related sulfides during black garlic processing

Summary: The thermal stabilities of alliin, S-allyl-L-cysteine (S-ALC), and gamma-glutamyl-cysteine (gamma-GC) were investigated during black garlic processing. It was found that gamma-GC was more stable than alliin and S-ALC. Alliin and its related sulfides changed significantly during the Maillard reaction stage. Further research showed that the optimal conditions for increasing the total content of alliin, S-ALC, and gamma-GC in black garlic were 90% humidity, 80 degrees C temperature, and 210 hours processing time. Sensory analysis indicated that the optimized black garlic samples scored higher in various aspects.

Effect of lyophilized chive (Allium wakegi Araki) supplementation to the frying batter mixture on quality attributes of fried chicken breast and tenderloin

Summary: The addition of lyophilized chives to batter mixtures for frying chicken breasts and tenderloins affected the properties, frying results, and sensory characteristics. The amount of lyophilized chives was directly proportional to the viscosity and crispness of the batter, but inversely proportional to the lightness, redness, yellowness, and pH. Sensory panelists rated the samples with 5% lyophilized chive supplementation in breast samples and 3% or 5% supplementation in tenderloin samples the highest.

The Use of a Thermal Process to Produce Black Garlic: Differences in the Physicochemical and Sensory Characteristics Using Seven Varieties of Fresh Garlic

Summary: This study showed that different garlic varieties exhibit varying physicochemical properties, such as antioxidant activity, total polyphenol content, and total soluble solids, during the ageing process to become black garlic. Sensory analysis revealed significant differences only in the texture pleasantness among the black garlic varieties, indicating that the sensory traits are largely consistent regardless of the variety. Additionally, the study found that most physicochemical parameters of fresh garlic cannot be used to predict the quality of black garlic.
