Seasonal variation in bioactive properties and phenolic composition of cardoon (Cynara cardunculus var. altilis) bracts

Summary: The study found that the phenolic compounds content in cardoon bracts varies at different maturation stages, with immature bracts having the highest content and exhibiting the best anti-inflammatory and cytotoxic activities. Furthermore, cardoon bracts at different maturity stages showed varying effects on oxidative haemolysis, antibacterial, and antifungal activities.
