Differentiation between species and regional origin of fresh and freeze-dried truffles according to their volatile profiles

Samples from different truffle hunting locations also showed potential differences in VOC profiles indicating regional origin, requiring further investigation for improved cross-validation results.

Summary: This study investigated the aroma, sensory profiles, maturity, and bacterial communities of T. magnatum from Italy, Croatia, Hungary, and Serbia. The results showed that while main odor active compounds were present in all truffles, their concentrations varied. The aroma of truffle extracts were discriminable by sites, with volatile profiles varying more within sites than across geographic area, suggesting that specificities of the aroma of T. magnatum truffles are more likely linked to individual properties than provenance.

Heterogeneity of the white truffle Tuber magnatum in a limited geographic area of Central-Southern Italy

Summary: The Molise region in Italy is one of the richest areas for truffles and contributes significantly to national production of the valuable Tuber magnatum. A study on two populations of T. magnatum from Molise region revealed significant variability within and between the populations, with three haplotypes identified regardless of collection site. High-throughput sequencing of 16S rRNA gene amplicons showed a predominance of alpha-Proteobacteria in truffle-associated bacterial communities, with some truffles also having unusual microbial profiles dominated by other bacterial genera like Pedobacter and Polaromonas.
