Functionality of Films from Nigella sativa Defatted Seed Cake Proteins Plasticized with Grape Juice: Use in Wrapping Sweet Cherries

Summary: The aim of this study was to enhance the functionality of Nigella sativa protein concentrate (NSPC) films using grape juice (GJ). The results showed that GJ acted as a plasticizer for NSPC films, improving their properties significantly. Additionally, the NSPC films exhibited promising antioxidant and antimicrobial properties when compared to control films.
