Cereal beta-glucans: an underutilized health endorsing food ingredient

Marcus Schmidt

Summary: This review discusses the properties and applications of cereal beta-glucan as a nutraceutical food ingredient, emphasizing the challenges in maintaining its health-promoting properties throughout food processing and storage. The understanding of the complex mechanisms behind the health benefits of beta-glucan is still incomplete, and a more thorough investigation of the molecule’s structure-size-function relationship is needed.

Determination of FODMAP contents of common wheat and rye breads and the effects of processing on the final contents

Marcus Schmidt et al.

Summary: This study aimed to investigate the possibilities of reducing FODMAP through adjusting processing parameters and evaluate the impact on FODMAPs in bread. The results showed that prolonged proofing reduces fructan content, while adding sourdough only alters the composition of FODMAPs.

Role of 8-glucan content, molecular weight and phytate in the bile acid binding of oat 8-glucan

Noora Makela et al.

Summary: This study investigated the impact of 8-glucan on bile acid binding, showing that viscosity and 8-glucan concentration are key factors affecting bile acid mobility. The 8-glucan gel network can trap bile acids, while the hydrolysis of phytate can increase bile acid binding by improving 8-glucan extractability.

Oat and Barley in the Food Supply and Use of Beta Glucan Health Claims

Jaimee Hughes et al.

Summary: Beta glucan, a soluble dietary fiber found in oats and barley, has known cholesterol-lowering benefits. Despite the availability of numerous products eligible for beta glucan claims, their usage remains limited both in Australia and globally. Health claims provide an important opportunity to communicate the role of food in health and disease management, with further assessment of consumer understanding recommended.
