In situ oral lubrication and smoothness sensory perception influenced by tongue surface roughness

Summary: The roughness of the tongue surface is positively correlated with the in situ friction coefficient, and intake of fluid food significantly reduces in situ oral lubrication. However, there are no significant differences in friction coefficient after consuming different types of fluid food. Participants with different tongue surface roughness exhibit no significant differences in smoothness perception.

This study investigated the effects of preloads with varying oral lubricating properties on appetite, food intake, and salivary biomarkers in healthy participants. While high lubricating preloads temporarily reduced hunger and desire to eat, the effects were not significant after baseline values were controlled for.

Summary: Natural variations in eating rate and associated oral processing contribute to differences in post-prandial glucose, insulin, and satiety responses. Slower eaters have higher post-prandial insulin levels and longer oral exposure time compared to faster eaters, leading to differences in glucose response. Faster eaters also report higher levels of hunger and desire to eat compared to slower eaters.

Comparison of oral physiological and salivary rheological properties of Chinese Mongolian and Han young adults

Summary: This study examined the differences in oral physiology and salivary rheological properties between two ethnic groups in China, the Han and Mongolian participants. The results showed distinct differences in bite forces and salivary physical properties, with Mongolian participants having stronger bite forces and Han participants having lower saliva flow rates and higher salivary viscosity. The findings suggest possible associations between dietary habits and oral physiological and saliva rheological properties.

Human physiological responses during swallowing of gel-type foods and its correlation with textural perception

Summary: By dynamically and synchronously investigating laryngeal movement, suprahyoid musculature activity, and tongue activity using gel-type foods, variables explaining human textural perceptions during swallowing were extracted. The study found that perceived hardness correlated with suprahyoid musculature activity, while perceived bolus uniformity and swallowing ease correlated with swallowing duration and tongue activity. In vivo measurements proved to evaluate swallowing-related textural perceptions more accurately than conventional mechanical measurements, with high accuracy achieved by combining these 3 in vivo measurement variables.

Higher Masticatory Performance and Higher Number of Chewing Strokes Increase Retronasal Aroma

Summary: The study aimed to investigate the relationship between aroma concentration and factors related to mastication state. Results showed that at 30 chewing strokes, the maximum aroma concentration and slope were significantly higher in the high masticatory performance group compared to the low masticatory performance group. Both groups exhibited a positive correlation between maximum aroma concentration and number of chewing strokes, while no significant correlation was found with stimulated salivary flow rate. Multiple regression analysis indicated that surface area, number of chewing strokes, and stimulated salivary flow rate were significant explanatory variables for aroma concentration.

Comparison of and relationships between oral physiology, anatomy and food oral processing behavior of Chinese (Asian) and Dutch (Caucasian) consumers differing in age

Age and ethnicity were found to impact the oral physiology, anatomy, and oral processing behavior of solid foods, with factors like body weight and number of teeth relating strongly to oral processing behavior. However, oral physiology and anatomy only partially explain the variation in oral processing behavior, suggesting that other factors such as culture and consumption habits may have a stronger influence.
