Bioactivity and bioaccessibility of phenolic compounds from Brazilian fruit purees

Summary: This study evaluated the phenolic content, antioxidant capacity, antimicrobial activity, and bioaccessibility in different fruit purees, finding that acerola from Brazil exhibited high antioxidant activity and total phenolic compounds concentration. The fruit puree extracts inhibited bacterial growth, with up to 8% of total phenolic compounds remaining bioaccessible after gastrointestinal digestion, indicating the potential of fruit purees as sources of bioactive compounds for industrial purposes.
