Evaluation of nutritional and elemental compositions of green and red cultivars of roselle: Hibiscus sabdariffa L.

Summary: Analysis of Roselle leaves, calyces, and seeds at different growth stages revealed high levels of carbohydrates, protein, fat, fiber, vitamins, and minerals, with low levels of anti-nutritional factors. The calcium, magnesium, and iron contents exceeded recommended daily intake for adults, while phosphorus and sodium levels were below the recommended intake. High phytate content in one sample can be reduced through processing methods like boiling and cooking.
