Summary: This study isolated and characterized the extracellular polymeric substances (EPSs) produced by the filamentous cyanobacterium Leptolyngbya sp. IkmLPT16, and investigated their chemical, functional, and rheological properties. The EPSs showed high water holding capacity, oil holding ability, metal sorption ability, and exhibited effective antioxidant activity. These findings suggest the potential applications of Leptolyngbya sp. EPSs in the food and pharmaceutical industries.
