Amino acid profile and protein quality related to canning and storage of swordfish packed in different filling media

Summary: This study investigated the effects of canning, different filling media, and storage on the amino acid profile and protein quality of swordfish. Results showed that frying and storage caused changes in the amino acid content of swordfish, while canned swordfish exhibited slight changes in some amino acids during storage. Quality indices indicated that canned swordfish packed in olive oil had the highest quality.
