Nanocomplexation between thymol and soy protein isolate and its improvements on stability and antibacterial properties of thymol

Summary: The study showed that the SPI-thymol nanocomplexes were formed mainly through hydrophobic interactions, enhancing the solubility, stability, and antibacterial activity of thymol. Moreover, with increasing mixing mass ratio, the encapsulation efficiency and solubility of thymol in complexes also increased.

trans-Cinnamaldehyde-doped quadripartite biopolymeric films: Rheological behavior of film-forming solutions and biofunctional performance of films

Summary: Biofunctional quadripartite films were developed by incorporating trans-Cinnamaldehyde into chitosan/poly(vinyl alcohol)/fish gelatin matrices. The addition of CIN increased tensile strength, reduced elongation-at-break, enhanced hydrophobicity, decreased water solubility and absorption. The films also showed antimicrobial activity, DPPH radical scavenging activity, and promising potential as inner functional packaging for food products.

The effect of cross-linker type on structural, antimicrobial and controlled release properties of fish gelatin-chitosan composite films incorporated with ε-poly-L-lysine

Summary: In this study, active antibacterial composite films were prepared by incorporating epsilon-poly-L-lysine (epsilon-PLL) into Siberian sturgeon gelatin-chitosan mixture and cross-linking with Glutaraldehyde (G) and/or Cinnamaldehyde (C). The addition of G resulted in improved mechanical properties and lower water vapor permeability, while C led to higher release of epsilon-PLL and stronger antibacterial activity. The results suggest that epsilon-PLL-fortified fish gelatin/chitosan composite films can be used as food packaging material with enhanced structural and antimicrobial properties.

Antibacterial activity of thymol/carvacrol and clinoptilolite composites prepared by supercritical solvent impregnation

Summary: Novel composites based on natural zeolite-clinoptilolite and monoterpene phenols-thymol and carvacrol were successfully prepared by supercritical solvent impregnation method, maintaining the zeolite lattice structure while incorporating the phenols. These composites exhibited strong antibacterial activity against bacteria such as Escherichia coli and Staphylococcus aureus, with the carvacrol-containing composite showing better antibacterial effects in different water media.
