Characterization of synbiotic ice cream made with probiotic yeast Saccharomyces boulardii CNCM I-745 in combination with inulin

Summary: The study evaluated the effects of probiotic yeast Saccharomyces boulardii CNCM I-745 in combination with prebiotic inulin on the survivability, physiochemical properties, and stability of ice cream. Results showed that inulin increased the viability of the probiotic yeast and adding 1% and 2% inulin recovered the firmness of the synbiotic ice cream. The synbiotic ice cream also showed improved melting properties and stability compared to control ice creams.

A novel functional reduced fat ice cream produced with pea protein isolate instead of milk powder

Summary: This study investigated the use of pea protein isolate in the production of functional reduced-fat and vegetarian/vegan ice creams. Results showed that adding pea protein as a milk powder substitute improved ice cream's physical and textural properties, but excessive amounts negatively affected sensory properties. Ice cream provides important nutrients and research has focused on enhancing its nutritional value through natural additives like fruit, vegetables, and plant proteins. Pea protein isolate presents potential for new ice cream formulations and increasing pea consumption.
