Characterization of key odor-active compounds in commercial high-salt liquid-state soy sauce by switchable GC/GC x GC-olfactometry-MS and sensory evaluation

Xiaojun Wang et al.

Summary: This study analyzed the odor compounds of five regular high-salt liquid-state soy sauces using a new switchable GC/GC x GC-olfactometry-mass spectrometry system. It identified several key odor-active compounds with high flavor dilution factors, and found that the cooked potato-like odor was the most important characteristic. The differences in odor characteristics lay in the balance of caramel-like/sweet, roasted/roasted nut-like, spicy/burnt, and unpleasant odor intensity, with fruity odor intensity being the weakest.

Dynamics and correlation of microbial community and flavor in Pixian Douban fermented with closed process of constant temperature

Wenwu Ding et al.

Summary: The closed fermentation of PXDB at a constant temperature achieved product quality standards but with lower levels of organic acids and free amino acids compared to traditional fermentation. The closed system has unique advantages in aroma formation and has a greater impact on fungal succession than traditional fermentation.

Screening of the volatile compounds in fresh and thermally treated watermelon juice via headspace-gas chromatography-ion mobility spectrometry and comprehensive two-dimensional gas chromatography-olfactory-mass spectrometry analysis

Fan Yang et al.

Summary: In this study, volatile compounds in fresh and thermally treated watermelon juices were analyzed using HS-GC-IMS and GC x GC-O-MS, identifying new compounds and confirming aroma profiles. Differential analysis with Volcano plot and heat-mapping allowed for efficient discrimination of the juices based on off-flavor contribution.

Characterization of volatile compounds between industrial closed fermentation and traditional open fermentation doubanjiang-meju

Wenwu Ding et al.

Summary: The study found that closed fermented doubanjiang-meju has more diverse and higher concentrations of volatile compounds compared to open fermented doubanjiang-meju, with stronger umami and soy sauce flavors. This provides a basis for further research on the closed fermentation process of tank fermenter.

Characterization of volatile compounds of Pixian Douban fermented in closed system of gradient steady-state temperature field

Wenwu Ding et al.

Summary: The study found that in the closed system of gradient steady-state temperature field (GSTF), compared to traditional fermentation, it was more conducive to producing a greater variety of esters and alcohols. Through a combination analysis of gas chromatography-olfactometry (GC-O) and odor activity value (OAV), 22 major aroma active compounds were identified in the three samples. Although the appearance, smell, texture, and taste of the three different samples showed different changes, the sensory characteristics of the SGT sample were closer to those of the STF sample according to quantitative descriptive analysis (QDA) and principal component analysis (PCA).
