This study evaluated the use of nanostructured lipid carriers to enhance the bioaccessibility and antioxidant activity of beta-carotene. The results suggested that the formulated nanostructured lipid carrier system can effectively deliver lipophilic bioactives like beta-carotene in beverage products.
