Pulsed Vacuum Drying of Pepper (Capsicum annuum L.): Effect of High-Humidity Hot Air Impingement Blanching Pretreatment on Drying Kinetics and Quality Attributes

Zhihua Geng et al.

Summary: With high moisture content, drying is important for prolonging the shelf life of fresh peppers. Chemical dipping and mechanical pricking methods have limitations, making feasible pretreatment methods preferable. This study explores the effects of high-humidity hot-air impingement blanching (HHAIB) on drying characteristics and quality of red peppers, demonstrating its promising potential for industrial use.

Plant volatiles: Using Scented molecules as food additives

Nabila Ben Derbassi et al.

Summary: This article provides an overview of the study of secondary metabolites, with a special focus on volatile molecules and their applications. Although some research has been done on the use of volatiles for food preservation, mostly in postharvest protection, the industry should start implementing these molecules in more sustainable approaches to preservation.

Studying the drying characteristics and quality attributes of chili pepper at different maturity stages: Experimental and mechanistic model

Eshetu Getahun et al.

Summary: The study found that chili peppers dried at 35% relative humidity and 50 degrees Celsius had the best drying quality, and as the drying air temperature increased, the moisture diffusivity and mass transfer coefficient increased. However, these values decreased with an increase in drying air relative humidity.

Modeling and thermodynamic properties of the drying of tamarind (Tamarindus indica L.) seeds

Weder N. Ferreira Junior et al.

Summary: This study aimed to fit different models to the experimental data of tamarind seeds drying and determine the diffusion coefficient, activation energy, and thermodynamic properties at different temperatures. Results showed that the effective diffusion coefficient increases with drying air temperature, with different models needed at different temperature ranges for accurate representation.

Influence of drying temperature on quality attributes of bell pepper (Capsicum annuum L.): Drying kinetics and modeling, rehydration, color, and antioxidant analysis

Ankan Kheto et al.

Summary: Increasing drying temperature can improve the drying rate and rehydration ratio of bell peppers, but also affect their pigment content and antioxidant activity. This study provides scientific data on the drying of different colored bell peppers at different temperatures, aiding in determining the optimal drying conditions for maintaining quality and color.

Chemical and Bioactive Characterization of the Essential Oils Obtained from Three Mediterranean Plants

Virginie Xavier et al.

Summary: The study characterized the essential oils obtained from Cupressus sempervirens L., Juniperus communis L., and Cistus ladanifer L. collected from different locations in Spain. The essential oils showed varying levels of terpenes content and bioactivities including antibacterial, antioxidant, and cytotoxic properties. While some essential oils exhibited toxicity against non-tumoral cells, they generally had higher GI(50) values than tumor cell lines.

Modelling drying kinetics of paddy in swirling fluidized bed dryer

Agustami Sitorus et al.

Summary: The study investigated the drying kinetic model of paddy under different capacities drying conditions in a swirling fluidized bed (SFB) dryer. The results showed that the drying rate of paddy decreased as the drying time increased in all treatment capacities evaluated. Among the models examined, the linear-plus-exponential model was able to describe the paddy drying kinetics using the SFB dryer effectively.
