Summary: A 3D printing method for starch-based food textures was developed using dual extrusion and on-board near infrared heating for thermal stabilization, enabling the design of hydrated starch-egg white powder systems and the study of inhomogeneous taste distribution. Defined concentration gradients of sodium chloride were spatially printed in food textures for the first time, resulting in saltiness enhancement due to the inhomogeneous spatial distribution of sodium chloride. This method allows for the elucidation of texture-taste release interactions.
