Investigation of weight loss in mozzarella cheese using NIR predicted chemical composition and multivariate analysis

Marco Franzoi et al.

Summary: The aim of this study was to develop multivariate process monitoring models for weight loss of high-moisture mozzarella cheese during shelf-life. Through chemical composition analysis and linear regression algorithm, it was found that linear regression algorithm is the most suitable method for routine process control, successfully predicting weight loss of the cheese.
