Sucrose fatty acid esters: synthesis, emulsifying capacities, biological activities and structure-property profiles

Summary: Sucrose fatty acid esters have been widely used in the chemical industry since 1939, primarily as surfactants, but their value as nutraceuticals and cosmetic additives has recently been recognized, leading to increased demand. This review discusses current methods for preparing sucrose fatty acid esters through chemical and enzymatic means, as well as exploring their historical development as surfactants. Additionally, it covers the antimicrobial, anticancer, and insecticidal activities of sucrose esters, along with analysis of their structure-property profiles.

Permeability-enhancing effects of three laurate-disaccharide monoesters across isolated rat intestinal mucosae
