Complexation ability and physicochemical properties of starch inclusion complexes with C18 fatty acids

Jingyi Zhou et al.

Summary: The study investigated the complexation ability and physicochemical properties of high amylose maize starch (HAMS) inclusion complexes with C18 fatty acids of various unsaturation levels. The results showed that the thermal stability of the complexes decreased with increasing unsaturation of the guest fatty acid, with different complexation methods influencing the formation and stability of the complexes. Ethanol concentration was found to play a role in forming inclusion complexes with higher crystallinity and thermal stability.

Immobilization of chitosan grafted carboxylic Zr-MOF to porous starch for sulfanilamide adsorption

Xiangze Jia et al.

Summary: A novel hierarchical porous starch-chitosan-UiO-66-COOH composite was developed for the treatment of pharmaceutical bearing sewage. The carboxylic zirconium metal organic framework within the composite showed high affinity for sulfanilamide adsorption, conforming to pseudo-second-order kinetic and Langmuir isothermic models. This composite preserved unique crystallization and thermal properties while offering stable macro-porous structural skeleton for accommodating nanoparticles.

Electrostatic deposition of polysaccharide onto soft protein colloidal particles: Enhanced rigidity and potential application as Pickering emulsifiers

Jiaqi Su et al.

Summary: In this study, beta-lactoglobulin-based composite nanoparticles with desirable properties were fabricated via electrostatic deposition for use as Pickering stabilizers. The adsorbed PGA molecules effectively hindered the denaturation of beta-lactoglobulin nanoparticles at the oil/water interface, contributing to the stability of the emulsion gels. Results indicate the potential of utilizing soft protein-based particles as particulate emulsifiers for designing Pickering emulsions.

Morphology, crystalline structure and digestibility of debranched starch nanoparticles varying in average degree of polymerization and fabrication methods

Trinh Thi My Duyen et al.

Summary: This study investigated the physicochemical characteristics and digestibility of starch nanoparticles (SNPs) fabricated from debranched cassava starch varying in degree of polymerization using nanoprecipitation and microemulsion methods. SNPs fabricated from high DP starch were well-dispersed and smaller, while those from medium and low DP starch were larger and more aggregated. The SNPs produced by the microemulsion method were larger and more aggregated compared to those by the nanoprecipitation method, with all SNPs showing higher relative crystallinity and more ordered structure than native starch. SNPs fabricated from low DP starch also had higher resistant starch content and lower blood glucose response in mice.

Fabrication and characterization of starch/zein nanocomposites with pH-responsive emulsion behavior

Songnan Li et al.

Summary: Novel hydrophobic modified starch nanoparticles were successfully fabricated through nanoprecipitation and complexation with zein, forming starch/zein nanocomposites with a unimodal particle distribution, small mean diameter, and specific contact angle. Analysis indicated that electrostatic interaction and hydrogen bonding were the main mechanisms for the formation and maintenance of the nanocomposites, providing pH-responsive behavior for emulsion delivery.

Solid encapsulation of lauric acid into empty V-type starch: Structural characteristics and emulsifying properties

Liang Huang et al.

Summary: In this study, lauric acid was embedded into hollow V-type starch using a solid encapsulation method, leading to the formation of starch-fatty acid complexes (SFAC). The complexing temperature was found to affect the structural characteristics and emulsifying properties of SFAC, with higher temperatures resulting in increased hydrophobic properties and particle size range. The SFAC-stabilized Pickering emulsion showed small droplet size and long-term storage stability, attributed to the formation of a gel-like network, indicating the potential of hydrophobic modified starch as a novel and multifunctional emulsifier.
