Conjugation of α-, β-, and κ-Caseins with Propylene Glycol Alginate Using a Transacylation Reaction as Novel Emulsifiers

Summary: Protein-polysaccharide conjugates formed by transacylation reaction between caseins and propylene glycol alginate showed superior emulsifying properties and high stability in a wide range of pH and ionic strength. The protein content, rather than the type of casein, was found to affect the interfacial tension and droplet size, while the polysaccharide moiety played a critical role in emulsion stability. These results suggest the potential for preparing protein-alginate conjugates with novel emulsifying properties using transacylation reaction.

Summary: The study aimed to develop and evaluate Maillard conjugates of pea protein or caseinate with dextran on the physical stability of nanoemulsions. It was found that the conjugates improved the physical stability of emulsions and lutein color retention, with the latter being better associated with particle size and lowest for PPI-stabilized emulsions.

Summary: The study found that oil droplets were always located in the casein-dominant regions regardless of the polymer types used for preparing emulsions. As Alg concentration increased, the gelation time of composite emulsion gels shortened, and the incorporation of oil droplets also affected the phase separation rate and extent between Alg and caseins.
