Effect of glutamic acid on the preparation and characterization of Pickering emulsions stabilized by zein

Summary: The study found that glutamic acid and zein combined in the form of noncovalent bonds, altering the characteristics of zein. Glutamic acid induced colloidal particle aggregation, altering the distribution of droplets in the emulsion and increasing protein adsorption on oil droplet surfaces. Hydrophobic and electrostatic interactions were the main driving forces for colloidal particle formation, as determined by force analysis and zeta potential changes.

Chitosan/zein bilayer films with one-way water barrier characteristic: Physical, structural and thermal properties

Summary: Highly stable nanosized Pickering emulsion (PE) prepared using clove bud natural essential oil stabilized with nanocellulose fiber was used to prepare gelatin/agar-based functional films. The inclusion of PE slightly improved mechanical strength and somewhat reduced vapor barrier properties of the gelatin/agar-based film, while maintaining thermal stability. Additionally, the PE provided excellent UV-barrier properties without sacrificing film transparency, along with potent antioxidant activities. These composite films with improved physical and functional properties are suitable for active food packaging applications.
