Antioxidant properties and digestion behaviors of polysaccharides from Chinese yam fermented by Saccharomyces boulardii

Summary: Novel polysaccharides were extracted from Chinese yam through fermentation with fungal probiotic Saccharomyces boulardii. The optimized fermented Chinese yam polysaccharides (FCYP) showed improved antioxidant activity and radioprotective effect. This indicates that S. boulardii-fermented Chinese yam polysaccharides could serve as a potential health food component with enhanced functionality properties.

Evaluation on the physicochemical and digestive properties of melanoidin from black garlic and their antioxidant activities in vitro

Summary: This study investigated the physicochemical properties and bioactivities of melanoidin (MLD) as an important compound in black garlic. The results showed that MLD had strong metal-ion chelating capacity and radical scavenging activities, positively correlated with molecular weight. Additionally, MLD remained unchanged during simulated digestion, indicating its resistance to digestion similar to dietary fiber. It was found that the bioactivities of MLD were significantly reduced under certain treatments, but stable and retained after adding specific enzymes, providing insights for further research and application in functional food production.

Summary: The polysaccharides from the shells of Juglans regia L. underwent significant changes in physicochemical properties during simulated gastrointestinal digestion, which led to increased anti-proliferative effects on HeLa cells. The digested polysaccharides exhibited stronger inhibition on cell viabilities through induction of apoptosis, excessive ROS accumulation, and cell cycle arrest at G2/M phase compared to undigested polysaccharides, suggesting their potential for anti-proliferative applications.

Summary: The extracted and purified yam polysaccharide showed good antioxidant activity with a molecular weight of 7.28 x 104. The derivatives of yam polysaccharide, especially phosphorylated polysaccharide, had scavenging ability to hydroxyl radicals similar to VC, laying a theoretical foundation for the development of yam polysaccharide-related foods.
