Effect of synergistic fermentation of Lactobacillus plantarum and Saccharomyces cerevisiae on thermal properties of wheat bran dietary fiber-wheat starch system

Sen Ma et al.

Summary: A synergistic fermentation system was constructed using single strains of Lactobacillus plantarum and Saccharomyces cerevisiae, with different levels of wheat bran dietary fiber (WBDF) fermented in this system. WBDF altered the thermal behavior and viscosity properties of starch, impacting the elasticity and mechanical strength of fermented starch gels, with 6% WBDF level showing the largest contribution. This study provides data for the production of high dietary fiber fermented flour products.

Effects of the Removal of Lipids and Surface Proteins on the Physicochemical and Structural Properties of Green Wheat Starches

Kangyi Zhang et al.

Summary: Green wheat starch and its isolated A- and B-type starch granules are physically modified through deproteinization and defatting treatments, leading to changes in morphology and crystallinity. Deproteinization increases gelatinization temperature and affects physicochemical properties differently across various starch samples. The treatment has a more significant impact on starch properties compared to defatting.

A comprehensive review of the factors influencing the formation of retrograded starch

Qing Chang et al.

Summary: The retrogradation of starch in starchy food is a natural process influenced by both internal factors like amylose and amylopectin and external factors such as processing conditions. Water plays a key role in affecting the gelatinization and retrogradation of starch, as well as serving as a conduit for the influence of other components that impact retrogradation. Three mechanisms are responsible for the formation of retrograded starch: the migration of starch molecular chains, the redistribution of water molecules, and the recrystallization kinetics of gelatinized starch.
