Microstructure and rheology of acid milk gels and stirred yoghurts-quantification of process-induced changes by auto- and cross correlation image analysis

Summary: This study evaluated whether emerging multimodal microscopy techniques combined with quantitative image analysis could detect differences in the microstructure of model dairy systems. Results showed that hydrodynamic cavitation and pressure homogenisation significantly impacted microstructure. Autocorrelation analysis of the protein network could describe differences in acid gel strength, while cross-correlation analysis quantified the relative distribution of fat and protein.
