The effect of emulsifier by-products and storage conditions on the techno-functional properties of model aerosol whipping cream

Max Blankart et al.

Summary: The study found variations in MAG content and techno-functional properties of model aerosol whipping cream stored under different conditions, while the emulsifier by-products did not have a significant impact on its techno-functional properties. Storage at 30 degrees Celsius and under a temperature profile resulted in emulsion instability.
