Summary: Nonthermal processing technologies aim to produce safe, fresh-like, and high quality food products while maintaining the quality attributes of the food during its shelf life. This study evaluated the microbial stability, physicochemical properties, and phytochemical characteristics of strawberry juice processed by ultrasonication, high pressure processing, and pulsed electric fields, showing differences in their effects on natural microbiota and quality characteristics during storage. High pressure processing was found to be the best option for extending the shelf life of strawberry juice and enhancing its phytochemical characteristics under the selected processing conditions.
