Targeted metabolomics of anthocyanin derivatives during prolonged wine aging: Evolution, color contribution and aging prediction

Summary: This study investigated the anthocyanin derivatives and chromatic characteristics of 234 different-vintage red wines using targeted HPLC-MS/MS and CIELAB approach. The results showed that the evolution patterns of different anthocyanin derivative classes varied during wine aging. Aging tawny characteristics were related to pyranoanthocyanins, while red violet color was associated with monomeric anthocyanins and flavanol-related derivates.

Co-regulation of Auxin and Cytokinin in Anthocyanin Accumulation During Natural Development of Purple Wheat Grains

Summary: The study investigated the connection between endogenous auxins and cytokinins with anthocyanin accumulation during the natural development of purple wheat grains. It was found that auxin content increased significantly during seed development, while CKs decreased at 25 days post-anthesis. Moreover, the findings suggested that auxins and CKs played an antagonistic role in the accumulation of anthocyanins during purple grain development, with ROS signaling being involved in the regulation of anthocyanin accumulation.

Effects of UV-A radiation on organ-specific accumulation and gene expression of isoflavones and flavonols in soybean sprout

Summary: The study found that UV-A radiation specifically stimulates the production of isoflavones in the roots of soybean sprouts, while non-UV-A treated roots mainly contain daidzein types. Kaempferol glycosides are mainly increased in aerial organs, especially in cotyledons, rather than in roots under UV-A radiation. This demonstrates the upregulation of the naringenin pathway in roots synthesizing genistin and kaempferol in response to UV-A.

Conversion of Organic Dyes into Pigments: Extraction of Flavonoids from Blackberries (Rubus ulmifolius) and Stabilization

Summary: The color of blackberries is mainly determined by natural dyes called anthocyanins, which can range in shades from red-purple to various colors depending on pH. This study used LC-ESI/LTQOrbitrap/MS to analyze the chemical composition of blackberry extract and investigated its adsorption process with different inorganic fillers. The analysis allowed estimation of maximum adsorption capacity of each filler, and thermogravimetric measurements determined the thermal stability and real adsorption of the organic extract.

The color difference of rubus fruits is closely related to the composition of flavonoids including anthocyanins

Summary: Flavonoid compounds in blackberry and raspberry, such as anthocyanins, have nutritional and health benefits. Different Rubus fruits were examined, with yellow raspberry 'Cold Summit' having the brightest color and Rubus hybrid 'Young' fruit having the highest brix. Significant differences were found in cyanidin-3-sambubioside content in the anthocyanin pathway, which may be mainly responsible for color variations. This study provides a theoretical basis for the comprehensive use and quality improvement of Rubus.
