Combinational effects of acid and salt addition on colloidal, interfacial, and emulsifying properties of purified soybean oil bodies

Summary: The study found that the addition of acetic acid and salt affects the emulsifying properties of oil bodies. Oil bodies with strong charges were stably dispersed at pH 4.0 and 4.5 without added salt, and the addition of NaCl caused screening of electrostatic interactions between oil bodies and induced salting-in effects. This mixture can be used as a potential eco-friendly emulsifier in various food emulsions with the appropriate formulation of acid and salt.

Summary: The study encapsulated anthocyanins (ACNs) in nanocomplexes with chitosan hydrochloride (CHC), carboxymethyl chitosan (CMC), and whey protein isolate (WPI), forming ACN-CHC/CMC-WPI nanocomplexes with excellent stability and sustained release properties. These nanocomplexes can enhance the protective effect of ACNs in food products, exhibiting improved stability at high temperature and in simulated gastrointestinal fluids.
