Ovomucin may be the key protein involved in the early formation of egg-white thermal gel

Summary: This study quantitatively analyzed the changes in proteins involved in the early stage of protein thermal gel formation and found that ovalbumin and ovomucoid increased in abundance, while other proteins decreased. Ultrasonic pretreatment altered the protein interactions, leading to changes in gel properties. The role of ovomucin in the formation and regulation of gels was highlighted in this study.

Summary: The study revealed that spray-drying and pasteurization treatments result in different functional properties of egg white, with spray-drying increasing surface hydrophobicity and zeta potential, and pasteurization causing disintegration of protein aggregates and altering gel structure. Quantitative N-glycoproteomic analysis showed reduced abundance of N-glycosites in SD-EW compared to F-EW, suggesting potential covalent cross-linking of N-glycans during spray-drying.
