Summary: The surface modification of beta-lactoglobulin amyloid fibrils was achieved by Maillard reaction with maltodextrin, resulting in improved colloidal stability and reduced turbidity. Prolonged heat treatment, however, led to hydrolysis of attached polysaccharide, reducing fibril height and hydrophilicity.

Summary: Whey protein fibrils act as excellent emulsifiers, but their size and functionality can be significantly altered during the emulsification process. This study investigated the impact of stress levels and the presence of oil on the size reduction of different amyloid fibril aggregates. The results showed differences in size reduction mechanisms between semi-flexible fibrils and flexible amyloid-like aggregates during emulsification.

Heating Wheat Gluten Promotes the Formation of Amyloid-like Fibrils

Summary: The study found that heating conditions, such as slow cooking at 78 degrees for 22 h, induced the formation of short straight fibrils in wheat gluten, while boiling for at least 15 min resulted in longer straight fibrils with typical amyloid fibril characteristics. These findings suggest that heat-treated wheat gluten-containing food products may contain amyloid-like fibrils.

Flexible protein nanofibrils fabricated in aqueous ethanol: Physical characteristics and properties of forming emulsions of conjugated linolenic acid

Summary: This study investigated the physical and chemical properties of emulsions prepared with nanofibrils of varying flexibility. Increasing ethanol levels led to more worm-like nanofibrils, especially in glycated proteins, which improved the thermal stability of the emulsions. The presence of worm-like nanofibrils also enhanced the oxidative stability of the emulsions, indicating potential applications in functional foods.

Summary: Oxidation-modified proteins deposition during normal aging and oxidative stress are associated with systemic amyloidoses. Met oxidation plays a crucial role in protein structure and aggregation, particularly in whey protein, affecting their properties in dairy industry. Studies indicate that oxidized beta-lg shows enhanced structural flexibility and aggregation propensity, with possible cytotoxic effects. A molecular docking study predicts selective oxidation of methionine residues at specific positions and suggests a new route for oxidative stress proteins in neurological disorders.
