Effect of thawing procedures on the properties of frozen and subsequently thawed casein concentrate

Ruifen Li et al.

Summary: The study revealed the effects of thawing procedures on the properties of frozen casein concentrates, with different thawing methods influencing viscosity and gelation. Thawing at 30 degrees C for 30 minutes resulted in lower viscosity, but prolonged storage at 4 degrees C followed by thawing increased viscosity and accelerated gelation.

Smoothing temperature and ratio of casein to whey protein: Two tools to improve nonfat stirred yogurt properties

A. Gilbert et al.

Summary: This study investigated the control of nonfat yogurt microstructure, textural properties, and syneresis through milk protein composition and smoothing temperature. The results showed that microgels play a crucial role in yogurt texture and are influenced by whey protein content and smoothing temperature. Optimizing these parameters may help improve nonfat stirred dairy gel.

Interaction between added whey protein ingredients and native milk components in non-fat acidified model systems

Ruifen Li et al.

Summary: Non-fat acidified milk model systems were constructed using frozen casein and whey protein concentrates, combined with different whey protein ingredients. Samples containing NWP exhibited higher surface hydrophobicity and increase in accessible thiol groups, with distinct rheological properties compared to MWP and WPC. Systems with WPC differentiated themselves by having a large quantity of small aggregates.
